Mưa quyết định bản đồ hương của Madagascar. Phần lớn cây hương mọc ở dải bờ biển phía đông và phía bắc, nơi mưa nhiều quanh năm. Vani tập trung ở vùng Sava phía đông bắc. Đinh hương ở vùng Analanjirofo. Ngọc lan tây ở đảo Nosy Be và vùng Ambanja đối diện. Cao nguyên trung tâm cho ravintsara, một kiểu hoá học của cây long não giàu 1,8-cineole.

Theo số liệu FAO giai đoạn 2018 đến 2023, Madagascar chiếm khoảng 42 phần trăm sản lượng vani thế giới. Đảo này cũng là nguồn lớn nhất của dầu lá đinh hương, và đinh hương là mặt hàng nông sản xuất khẩu thứ hai sau vani. Tên Bourbon trên nhãn vani được dùng chung cho Madagascar, Réunion và Comoros, theo tên cũ của đảo Réunion.

Một đặc điểm chung của nhiều nguồn trên đảo là quy mô nông hộ nhỏ và cất dầu bằng nồi đun củi ngay tại chỗ. Điều đó ảnh hưởng trực tiếp đến rừng, đến giá, và đến độ đồng đều giữa các lô. Phong lan vani và thụ phấn tay

Vani là một cây phong lan. Vanilla planifolia là loài lan leo gốc Mexico, bám vào cây chủ và cho những chùm hoa màu vàng lục. Ở Mexico có loài ong thụ phấn tự nhiên cho nó. Ở Madagascar thì không. Không có con ong ấy, hoa nở rồi rụng mà không đậu quả.

Lời giải đến từ đảo Réunion láng giềng. Năm 1841, một cậu bé mười hai tuổi tên Edmond Albius tìm ra cách thụ phấn nhanh bằng một que mảnh và một động tác của ngón cái: nhấc lớp màng ngăn giữa hai bộ phận của hoa, rồi ép phấn lên đầu nhuỵ. Cách làm ấy vẫn được dùng đến hôm nay, vì gần như toàn bộ vani trên thế giới được thụ phấn bằng tay.

Mỗi hoa chỉ mở trong một ngày, và phải được thụ phấn trong ngày đó. Một hoa cho một quả. Khoảng 80 phần trăm vani Madagascar đến từ vùng Sava, chủ yếu từ nông hộ nhỏ, nơi việc đi qua từng dây lan mỗi ngày trong mùa hoa là công việc của cả nhà. Giá của một ký vani vì vậy chứa cả công sức của hàng nghìn động tác ngón tay.

Ủ quả: vanillin hình thành

Quả vani xanh gần như không có mùi. Trong mô quả, phân tử thơm còn nằm ở dạng liên kết với đường, gọi là glucovanillin. Mùi chỉ hình thành qua quá trình ủ kéo dài nhiều tháng: chần quả trong nước nóng, ủ kín cho quả đổ mồ hôi, phơi, rồi làm khô chậm. Trong những tháng đó, enzyme của chính quả tách đường ra, và vanillin được giải phóng.

Vanillin là một phân tử nhỏ, công thức C8H8O3, mùi ngọt, ấm, như kem sữa, hơi phấn. Nó là hợp chất thơm đơn lẻ chính của quả đã ủ, nhưng không phải toàn bộ mùi vani. Mùi vani tự nhiên đến từ hàng trăm hợp chất khác cùng lúc, như 4-hydroxybenzaldehyde, anisaldehyde và các acid thơm với lượng rất nhỏ. Vani không có tinh dầu chưng cất; nó được dùng dưới dạng cồn ngâm, chiết xuất bằng dung môi hoặc bằng CO2.

Vanillin tổng hợp, hoặc vanillin làm từ eugenol hay lignin, rẻ hơn vani tự nhiên nhiều lần. Mũi không phân biệt được nguồn gốc; phân tích đồng vị carbon thì có. Đây là một trong những lý do giá vani tự nhiên dao động mạnh: nó cạnh tranh với một phân tử giống hệt nhưng làm nhanh hơn.

Giá còn phụ thuộc vào thời tiết, trộm quả và chính sách. Ngày mở vụ thu quả xanh do chính phủ ấn định mỗi năm để hạn chế hái non và trộm quả; vụ 2024 đến 2025 ở Sava bắt đầu vào cuối tháng Sáu. Tháng 5 năm 2023, Madagascar bãi bỏ giá sàn xuất khẩu 250 USD mỗi ký. Giá sau đó giảm mạnh, một số loại xuống dưới 20 USD mỗi ký, và tháng 6 năm 2026 chính phủ đặt lại một mức giá sàn thu mua tại vườn thấp hơn.

Đinh hương trên bờ biển phía Đông

Nụ đinh hương là hoa chưa kịp nở, hái và phơi khô. Cây Syzygium aromaticum gốc quần đảo Maluku của Indonesia, được trồng dọc bờ biển phía đông Madagascar, tập trung ở vùng Analanjirofo, tên tiếng Malagasy có nghĩa là rừng đinh hương. Khoảng 90 phần trăm sản lượng nằm ở ba huyện Mananara, Soanierana Ivongo và Fénérive Est, trên khoảng 80.000 hecta, là nguồn thu chính của khoảng 30.000 nông hộ.

Madagascar đứng thứ hai về sản lượng nụ đinh hương sau Indonesia, nhưng xuất khẩu nhiều hơn, vì Indonesia dùng phần lớn cho thuốc lá kretek trong nước. Nụ được hái khoảng từ tháng Mười đến tháng Ba. Ngoài mùa nụ, nông hộ cắt lá và gom cành rụng để cất dầu lá. Dầu lá Madagascar chứa trên 80 phần trăm eugenol, và phần lớn được tinh chế tiếp thành eugenol tự nhiên trên 99 phần trăm, nguyên liệu cho chính loại vanillin tự nhiên làm từ eugenol.

Ba loại dầu đinh hương, từ nụ, cành và lá, khác nhau ở eugenyl acetate và caryophyllene; nhãn cần ghi rõ bộ phận cất. Dầu nụ đinh hương có giá cao nhất và mùi mịn nhất trong ba loại, với eugenol từ khoảng 73 đến 97 phần trăm. Chính hàm lượng eugenol ấy đặt mức tối đa trên da của dầu nụ ở 0,5 phần trăm.

Nồi cất dầu lá ở nông thôn đốt bằng củi. Một nghiên cứu năm 2024 trên tạp chí Forest Policy and Economics cho rằng ngành đinh hương cần thêm biện pháp để không góp phần làm mất rừng. Một số chương trình đang trồng cây lấy củi và thử nồi cất tiết kiệm nhiên liệu ở Analanjirofo.

Ngọc lan tây từ Nosy Be và Comoros

Hoa ngọc lan tây được cất ngay trong ngày hái. Cananga odorata dạng genuina được trồng ở đảo Nosy Be và vùng Ambanja, nhưng nguồn lớn nhất vẫn là quần đảo Comoros láng giềng, đặc biệt đảo Anjouan. Năm 1885, Léon Humblot nhận nhượng địa trên đảo Grande Comore và lập đồn điền gia vị và cây hương; từ thập niên 1960 và 1970, khi đất được chia lại, nông dân Comoros bắt đầu tự cất dầu.

Theo nghiên cứu chuỗi giá trị của Pierre William Johnson năm 2023, Comoros sản xuất 40 đến 70 tấn dầu mỗi năm, trên tổng khoảng 100 tấn của thế giới. Ở Anjouan, khoảng năm đến sáu nghìn phụ nữ làm nghề hái hoa. Mỗi cây cho khoảng một ký hoa mỗi đợt; một nồi cất nhận 100 đến 200 ký. Lò truyền thống đốt củi chỉ đạt hiệu suất năng lượng 15 đến 25 phần trăm, và Anjouan đã mất khoảng 70 phần trăm rừng tự nhiên.

Ngọc lan tây là một trong số ít tinh dầu được bán theo phân đoạn của cùng một mẻ cất. Dầu ra đầu tiên, gọi là Extra, giàu ester và p-cresyl methyl ether, mùi hoa đậm và ngọt. Sau đó lần lượt là cấp I, II và III, ngày càng nặng và nhiều sesquiterpene hơn; dầu complete là cả mẻ không chia. Tiêu chuẩn ISO 3063 phân biệt các cấp chủ yếu bằng tỉ trọng. Mùa thu hoạch trên đảo

Mỗi nguyên liệu trên đảo có một nhịp riêng. Vani mở vụ quả xanh vào cuối tháng Sáu hoặc tháng Bảy theo quyết định hằng năm, rồi còn nhiều tháng ủ trước khi quả có mùi. Nụ đinh hương hái từ tháng Mười đến tháng Ba. Lá đinh hương được cắt quanh năm, nhiều hơn ngoài mùa nụ. Ngọc lan tây ra hoa quanh năm theo từng đợt. Ravintsara trên cao nguyên được cất quanh năm.

Cao nguyên còn cho một ví dụ về tên gọi. Ravintsara là tên Malagasy của cây long não Cinnamomum camphora trồng trên đảo; dầu lá của nó giàu 1,8-cineole, thường hơn một nửa, và gần như không có camphor. Ravensara là một loài bản địa khác cùng họ Long não, với dầu có estragole hoặc methyleugenol cao ở một số mẫu. Hai cái tên gần giống nhau này bị nhầm trên thị trường trong nhiều năm, nên tên Latin và kiểu hoá học quan trọng hơn tên thương mại.

Rain decides the scent map of Madagascar. Most aromatic crops grow along the eastern and northern coasts, where rain falls through the year. Vanilla is concentrated in the Sava region in the northeast. Clove is in Analanjirofo. Ylang ylang is on the island of Nosy Be and in the Ambanja area facing it. The central highlands give ravintsara, a chemotype of the camphor tree rich in 1,8-cineole.

According to FAO figures for 2018 to 2023, Madagascar produced about 42 percent of the world's vanilla. The island is also the largest source of clove leaf oil, and clove is its second agricultural export after vanilla. The name Bourbon on vanilla labels is shared by Madagascar, Réunion and the Comoros, after the old name of Réunion.

A common feature of many sources on the island is small family farms and distillation in wood fired stills on site. That affects the forest, the price and the consistency from one lot to the next. The vanilla orchid and hand pollination

Vanilla is an orchid. Vanilla planifolia is a climbing orchid from Mexico that clings to a host tree and bears clusters of greenish yellow flowers. In Mexico a native bee pollinates it. In Madagascar there is none. Without that bee, the flower opens and falls without setting fruit.

The answer came from neighbouring Réunion. In 1841, a twelve year old boy named Edmond Albius found a quick way to pollinate the flower with a thin stick and a movement of the thumb: lift the membrane that separates the two parts of the flower, then press the pollen onto the stigma. The method is still used today, since nearly all the world's vanilla is pollinated by hand.

Each flower opens for a single day and must be pollinated that day. One flower gives one pod. About 80 percent of Madagascar's vanilla comes from Sava, mostly from small family farms, where walking every vine each day of the flowering season is work for the whole household. The price of a kilogram of vanilla therefore holds thousands of small movements of the fingers.

Curing the pods: vanillin forms

A green vanilla pod has almost no smell. Inside the tissue, the aromatic molecule is still bound to a sugar, as glucovanillin. The smell only forms through a curing process lasting several months: the pods are blanched in hot water, sealed to sweat, sun dried and then dried slowly. During those months, the pod's own enzymes split off the sugar and vanillin is released.

Vanillin is a small molecule, formula C8H8O3, sweet, warm, creamy and slightly powdery. It is the main single aromatic compound in pods after curing, but not the whole vanilla smell. Natural vanilla smell comes from hundreds of other compounds together, such as 4-hydroxybenzaldehyde, anisaldehyde and aromatic acids in very small amounts. Vanilla has no distilled oil; it is used as a tincture, a solvent extract or a CO2 extract.

Synthetic vanillin, or vanillin made from eugenol or lignin, is many times cheaper than natural vanilla. The nose cannot tell the origin apart; carbon isotope analysis can. This is one reason the price of natural vanilla swings so widely: it competes with an identical molecule made much faster.

Price also depends on weather, theft and policy. The opening date of the green pod harvest is set by the government each year to limit early picking and theft; the 2024 to 2025 season in Sava opened at the end of June. In May 2023 Madagascar abolished its export floor price of 250 USD per kilogram. Prices then fell sharply, some grades below 20 USD per kilogram, and in June 2026 the government set a new, lower farm gate floor price.

Clove on the east coast

A clove is a flower bud picked before it opens and dried. The tree, Syzygium aromaticum, is native to the Maluku Islands of Indonesia and grows along Madagascar's east coast, concentrated in Analanjirofo, a Malagasy name meaning the forest of cloves. About 90 percent of production lies in three districts, Mananara, Soanierana Ivongo and Fénérive Est, over about 80,000 hectares, the main income of some 30,000 farming households.

Madagascar ranks second in clove bud production after Indonesia, but exports more, because Indonesia uses most of its crop for domestic kretek cigarettes. Buds are picked roughly from October to March. Outside the bud season, farmers cut leaves and gather fallen twigs to distil leaf oil. Madagascan leaf oil holds more than 80 percent eugenol, and much of it is refined further into natural eugenol above 99 percent, the feedstock for the very natural vanillin made from eugenol.

The three clove oils, from bud, stem and leaf, differ in eugenyl acetate and caryophyllene; the label should name the part distilled. Clove bud oil is the most expensive and the finest in smell of the three, with eugenol at roughly 73 to 97 percent. That eugenol content sets the maximum skin level for bud oil at 0.5 percent.

Leaf oil stills in the countryside burn firewood. A 2024 study in Forest Policy and Economics argued that the clove sector needs further measures so as not to contribute to forest loss. Some programmes are planting fuelwood trees and testing fuel efficient stills in Analanjirofo.

Ylang ylang from Nosy Be and the Comoros

Ylang ylang flowers are distilled on the day they are picked. Cananga odorata, form genuina, is grown on Nosy Be and around Ambanja, but the largest source remains the neighbouring Comoros, especially the island of Anjouan. In 1885 Léon Humblot received a concession on Grande Comore and set up plantations of spices and aromatic plants; from the 1960s and 1970s, as the land was redistributed, Comorian farmers began distilling on their own.

According to a 2023 value chain study by Pierre William Johnson, the Comoros produce 40 to 70 tonnes of oil a year, out of a world total of about 100 tonnes. On Anjouan, some five to six thousand women work as flower pickers. Each tree gives about one kilogram of flowers per picking; a still takes 100 to 200 kilograms. Traditional wood fired stills reach only 15 to 25 percent energy efficiency, and Anjouan has lost about 70 percent of its natural forest.

Ylang ylang is one of the few essential oils sold by fractions of a single distillation. The first oil to come over, called Extra, is rich in esters and p-cresyl methyl ether, with a dense, sweet floral smell. Then come grades I, II and III, each heavier and richer in sesquiterpenes; complete oil is the whole run undivided. The standard ISO 3063 separates the grades mainly by density. Harvest seasons on the island

Each material on the island keeps its own rhythm. Vanilla's green pod season opens at the end of June or in July by yearly decree, followed by months of curing before the pods smell of anything. Clove buds are picked from October to March. Clove leaves are cut through the year, more so outside the bud season. Ylang ylang flowers year round in flushes. Ravintsara in the highlands is distilled year round.

The highlands also offer a lesson in names. Ravintsara is the Malagasy name for the camphor tree, Cinnamomum camphora, grown on the island; its leaf oil is rich in 1,8-cineole, usually more than half, with almost no camphor. Ravensara is a different native species in the laurel family, whose oils show high estragole or methyleugenol in some samples. The two similar names were confused on the market for years, so the Latin name and the chemotype matter more than the trade name.

That rhythm explains why two lots with the same name can differ. A lot of vanilla depends on the opening date, the ripeness at picking and each household's curing. A lot of ylang ylang depends on the hour of picking, the time from garden to still, and the point where the run is cut. A lot of clove leaf oil depends on the ratio of leaves to twigs in the still.
