Một chai tinh dầu cam ép từ vỏ, trong đó 86 đến 96 phần trăm là một phân tử. Phần mùi làm nên quả cam nằm trong vài phần trăm còn lại. Ba chữ trên nhãn, rectified, folded, terpeneless, ghi lại những lần tinh dầu được đưa trở lại nồi cất để xử lý phần lớn ấy.

Một chai cam, ba chữ trên nhãn

Dầu đi ra từ nồi cất hay máy ép không phải lúc nào cũng là thành phẩm. Có dầu được cất lần thứ hai để bỏ tạp chất, màu sẫm hay mùi lạ. Có dầu được cô đặc để tăng tỷ lệ những chất mang mùi. Có dầu bị bỏ đi một phần terpene hydrocarbon, nhóm chiếm phần lớn thể tích nhưng góp rất ít vào mùi.

Ba chữ rectified, folded và terpeneless mô tả ba mức can thiệp. Tiêu chuẩn ISO 9235:2021 định nghĩa từng chữ. Tinh dầu rectified là tinh dầu đã qua chưng cất phân đoạn để thay đổi hàm lượng một số chất, màu, hoặc cả hai. Tinh dầu cô đặc, hay folded, là tinh dầu được xử lý bằng một quá trình vật lý để cô một hoặc nhiều thành phần mong muốn. Tinh dầu terpeneless là tinh dầu rectified đã bị bỏ một phần các phân đoạn chủ yếu gồm monoterpene hydrocarbon.

Những chữ này xuất hiện nhiều nhất trên các loại tinh dầu cam chanh, và trên một nhóm nhỏ dầu gỗ chưng cất khô như cade. Hai nhóm nguyên liệu rất khác nhau, nhưng cùng một logic: bỏ đi phần không mong muốn để giữ phần mong muốn.

Để hiểu vì sao ngành hương vị cần những dạng này, cần bắt đầu từ phân tử chiếm gần hết chai cam.

Limonene: phần lớn mà nhạt

Limonene là một monoterpene hydrocarbon, khối lượng phân tử khoảng 136, không có nguyên tử oxy. Mùi được mô tả là cam tươi, vỏ cam quýt, ngọt thanh; một nốt đầu tiêu biểu của họ cam chanh. Nhưng so với lượng của nó trong dầu, đóng góp vào mùi là nhỏ.

Trong tinh dầu cam ngọt ép lạnh, dạng (+) limonene chiếm 86 đến 93 phần trăm với dầu Brazil, 94 đến 96 phần trăm với dầu Ý, khoảng 96 phần trăm với dầu Tây Ban Nha. Brazil là nước sản xuất lớn nhất, hơn một nửa sản lượng thế giới; dầu cam ngọt là tinh dầu được sản xuất nhiều nhất theo khối lượng, phần lớn là sản phẩm phụ của ngành nước cam. Trong tinh dầu chanh vàng ép lạnh, limonene thấp hơn, khoảng 57 đến 76 phần trăm, cùng beta pinene và gamma terpinene.

Mùi đặc trưng nằm trong phần nhỏ còn lại: các aldehyde như decanal, octanal và citral, các alcohol như linalool, và các ester. Đó là những phân tử có oxy, thường gọi chung là oxyterpene. Bỏ bớt limonene thì tỷ lệ của chúng tăng lên.

Limonene còn có một điểm yếu. Khi tiếp xúc với không khí, nó bị oxi hoá thành hydroperoxide có khả năng gây mẫn cảm da, và mùi chuyển sang gắt, giống dầu thông. Dữ liệu tổng hợp cho thấy oxi hoá có thể làm khả năng gây dị ứng tăng khoảng mười lần. Limonene cũng nằm trong danh sách chất gây dị ứng hương liệu phải ghi nhãn tại EU.

Cất lại: rectified

Rectified nghĩa là cất lại một tinh dầu, thường dưới chân không, giữ phần giữa và bỏ phần đầu hoặc phần đuôi. Mục đích có thể là bỏ màu, bỏ những mùi cháy hay mùi cỏ của lần cất đầu, hoặc hạ hàm lượng một chất không mong muốn. ISO dùng tinh dầu bạc hà rectified làm ví dụ.

Chân không là điều kiện quan trọng. Hạ áp suất làm hạ điểm sôi, nên dầu được tách ở nhiệt độ thấp hơn và các aldehyde nhạy nhiệt không bị hỏng. Monoterpene hydrocarbon sôi thấp hơn phần lớn các hợp chất có oxy, nên chúng ra trước; phần tim giữ lại các phân tử mang mùi.

Cùng nguyên lý, một số dầu được xử lý để bỏ một chất cụ thể. Cam bergamot FCF đã được bỏ phần lớn furocoumarin như bergapten. Dầu hạnh nhân đắng FFPA đã được bỏ axit cyanhydric, một chất rất độc sinh ra cùng benzaldehyde khi hạt được ngâm và cất. ISO xếp các dầu đã tẩy màu, đã rửa hay đã loại sắt vào nhóm tinh dầu đã xử lý sau, gọi tên bằng một tính từ chỉ cách xử lý.

Rectified không có nghĩa là tốt hơn hay kém hơn. Nó có nghĩa là đã qua một bước nữa, và bước ấy cần được ghi lại. Phiếu phân tích của một dầu rectified nên cho biết phần nào đã bị bỏ và phần nào còn lại.

Cô đặc: 5 fold, 10 fold

Con số fold là tỷ lệ giữa dầu ban đầu và thành phẩm. Một dầu cam 5 fold là năm phần dầu gốc cô lại còn một phần. Phần bị bỏ đi chủ yếu là limonene. Fold càng cao, terpene còn lại càng ít; ở mức fold rất cao, sản phẩm tiến gần đến dầu terpeneless.

Có ba cách chính để bỏ terpene. Cách phổ biến nhất trong công nghiệp là chưng cất phân đoạn chân không, như đã mô tả. Cách thứ hai là chiết lỏng lỏng dựa trên độ phân cực: dầu được lắc với cồn pha nước; các hợp chất có oxy chuyển sang pha cồn, còn hydrocarbon ở lại. Các nghiên cứu gần đây đã thử chất lỏng ion thay cho cồn. Cách thứ ba là hấp phụ sắc ký qua cột silica: hydrocarbon ra trước, các hợp chất có oxy bị giữ lại rồi được rửa ra bằng dung môi phân cực hơn. Cách này tách sạch nhưng tốn nhiều dung môi, nên hợp với mẻ nhỏ. CO2 siêu tới hạn và chưng cất phân tử cũng được dùng.

Con số fold không nói gì về phương pháp. Hai dầu 10 fold có thể khác nhau nếu một dầu được cất và dầu kia được chiết. Chiết suất, độ quay cực và hàm lượng aldehyde trên phiếu phân tích nói nhiều hơn con số fold.

Phần terpene bị tách ra cũng không bị bỏ. Nó được bán riêng; ISO gọi là terpenes, như orange terpenes, terpene cam. Một chai cam vì thế có thể trở thành hai sản phẩm: phần mùi đậm và phần limonene gần như tinh khiết.

Terpeneless và độ tan trong cồn

Limonene và các terpene hydrocarbon khác tan kém trong cồn loãng. Đồ uống trong suốt hay nước hoa kiểu cologne nồng độ cồn thấp pha bằng tinh dầu thường dễ bị đục. Dầu terpeneless tan trong. Vì vậy ngành hương vị dùng tinh dầu chanh terpeneless cho đồ uống trong, và ngành nước hoa dùng các dạng cô đặc khi cần một nốt cam chanh sạch trong dung dịch cồn nước.

Độ bền là lý do thứ hai. Terpene hydrocarbon dễ oxi hoá; bỏ phần lớn limonene giúp dầu giữ tốt hơn khi lưu kho. Độ mạnh là lý do thứ ba: vì phần mang mùi đã được cô lại, một lượng nhỏ dầu folded hay terpeneless tương đương nhiều lần khối lượng dầu gốc.

Nhưng có một cái giá. Dầu terpeneless mất đi cái nhẹ, cái tươi mà terpene mang lại. Mùi của nó gần với phần tim của quả hơn là với lúc vỏ cam vừa bị bóc. Trên que thử, dầu cam gốc mở ra sáng và bay nhanh; dầu 10 fold mở ra chậm hơn, đậm hơn, nghiêng về aldehyde.

Dầu đã xử lý vẫn chịu giới hạn IFRA theo thành phần. Khi limonene giảm, tỷ lệ citral hay linalool tăng lên, nên giới hạn sử dụng có thể chặt hơn dầu gốc. Một dầu mạnh hơn cần một phép tính pha loãng mới, không phải phép tính cũ của dầu cam thường.

Cade rectified: loại bỏ phần không mong muốn

Cade là tên của dầu; cây nguồn là Juniperus oxycedrus, cây bách xù gai. Dầu được làm bằng chưng cất khô, không có nước hay hơi nước, nên gỗ bị nhiệt phân. Khi phần tinh dầu trong gỗ cất ra, theo sau là một chất giống hắc ín hoà tan vào nó. Dầu cade thương mại là hỗn hợp của cả hai. Thành phần chính được ghi là delta cadinene.

Nhiệt phân gỗ tạo ra các hydrocarbon thơm đa vòng, như benzo[a]pyrene, cùng nhóm chất có trong khói thuốc lá. Cất lại loại bỏ phần lớn chúng. IFRA chỉ chấp nhận loại cade rectified và hắc ín bạch dương đã tinh chế, với tổng lượng benzo[a]pyrene và 1,2 benzanthracene trong thành phẩm không vượt 1 ppb. IFRA khuyến nghị không dùng dầu cade thô làm nguyên liệu hương cho bất kỳ sản phẩm nào.

Ở đây chữ rectified mang nghĩa khác hẳn trên chai cam. Với cam, rectified hay folded là chuyện mùi, độ tan và độ bền. Với cade, rectified là điều kiện để được dùng. Ngay cả sau bước này, benzo[a]pyrene vẫn có thể còn trong dầu cade rectified ở mức đến 20 ppb, nên dầu phải được dùng rất thấp để thành phẩm đạt giới hạn.

Hai chai, hai lý do cho cùng một chữ. Một chai đi thêm một vòng để mùi đậm hơn; chai kia đi thêm một vòng để bỏ đi điều không được phép. Cách tinh dầu cam chanh được lấy ra từ vỏ ngay từ đầu được kể trong bài vỏ cam dưới trục ép.

An oil leaving the still or the press is not always the finished product. Some oils are distilled a second time to remove impurities, dark colour or off notes. Some are concentrated to raise the share of odour bearing compounds. Some lose part of their terpene hydrocarbons, the group that fills most of the volume but adds little to the smell.

The three words rectified, folded and terpeneless describe three levels of intervention. The ISO 9235:2021 standard defines each. A rectified essential oil is one that has undergone fractional distillation to change the content of certain compounds, its colour, or both. A concentrated or folded oil is one processed by a physical process to concentrate one or more components of interest. A terpeneless oil is a rectified oil from which fractions consisting mainly of monoterpene hydrocarbons have been partly removed.

These words appear most often on citrus oils, and on a small group of dry distilled wood oils such as cade. The two groups of materials are very different, but the logic is the same: remove the unwanted part to keep the wanted one.

To see why the flavour and fragrance industry needs these forms, it helps to start with the molecule that fills almost the whole bottle of orange.

Limonene: The Large, Faint Part

Limonene is a monoterpene hydrocarbon with a molecular weight of about 136 and no oxygen atom. Its smell is described as fresh orange, citrus peel, lightly sweet; a defining top note of the citrus family. Yet relative to its quantity in the oil, its contribution to the smell is small.

In cold pressed sweet orange oil, (+) limonene makes up 86 to 93 percent in Brazilian oil, 94 to 96 percent in Italian oil and about 96 percent in Spanish oil. Brazil is the largest producer, with more than half of world output; sweet orange is the most produced essential oil by volume, largely a by product of the orange juice industry. In cold pressed lemon oil limonene is lower, about 57 to 76 percent, with beta pinene and gamma terpinene.

The characteristic smell lies in the small remainder: aldehydes such as decanal, octanal and citral, alcohols such as linalool, and esters. These are oxygenated molecules, often grouped as oxyterpenes. Removing part of the limonene raises their share.

Limonene has another weakness. Exposed to air it oxidises into hydroperoxides that can sensitise skin, and its smell turns sharp and turpentine like. Pooled data suggest oxidation may raise its allergenic potential roughly tenfold. Limonene is also on the EU list of fragrance allergens that must be labelled.

Distilled Again: Rectified

Rectified means redistilling an oil, usually under vacuum, keeping the middle cut and discarding the head or the tail. The aim may be to remove colour, to remove burnt or grassy notes from the first run, or to lower the content of an unwanted compound. ISO gives rectified mint oil as its example.

The vacuum matters. Lower pressure lowers boiling points, so the oil is separated at lower temperature and heat sensitive aldehydes are not damaged. Monoterpene hydrocarbons boil lower than most oxygenated compounds, so they come over first; the heart keeps the odour bearing molecules.

On the same principle, some oils are processed to remove one specific compound. Bergamot FCF has had most of its furocoumarins, such as bergapten, removed. Bitter almond oil FFPA has had its hydrocyanic acid removed, a highly toxic compound released with benzaldehyde when the kernels are macerated and distilled. ISO places decolourised, washed or iron free oils among post processed essential oils, named by an adjective for the process.

Rectified does not mean better or worse. It means one more step, and that step should be recorded. The certificate of analysis of a rectified oil should show what was removed and what remains.

Concentrated: 5 Fold, 10 Fold

The fold number is the ratio of starting oil to finished product. A 5 fold orange oil is five parts of the parent oil reduced to one. What is removed is mostly limonene. The higher the fold, the fewer terpenes remain; at very high folds the product approaches a terpeneless oil.

There are three main ways to remove terpenes. The most common in industry is vacuum fractional distillation, as described. The second is liquid to liquid extraction based on polarity: the oil is shaken with aqueous ethanol; the oxygenated compounds move into the alcohol phase while the hydrocarbons stay behind. Recent studies have tested ionic liquids in place of ethanol. The third is chromatographic adsorption through a silica column: the hydrocarbons elute first, while the oxygenated compounds are held and then washed out with a more polar solvent. It separates cleanly but uses a lot of solvent, so it suits small batches. Supercritical CO2 and molecular distillation are also used.

The fold number says nothing about the method. Two 10 fold oils may differ if one was distilled and the other extracted. Refractive index, optical rotation and aldehyde content on the certificate of analysis say more than the fold number.

The separated terpenes are not discarded either. They are sold on their own; ISO calls them terpenes, as in orange terpenes. One bottle of orange can thus become two products: the concentrated scent and an almost pure limonene.

Terpeneless and Solubility in Alcohol

Limonene and other terpene hydrocarbons dissolve poorly in dilute alcohol. Clear drinks or low alcohol colognes made with ordinary oils tend to turn cloudy. Terpeneless oils dissolve clear. That is why the flavour industry uses terpeneless lemon oil for clear drinks, and why perfumery uses concentrated forms when it needs a clean citrus note in a water and alcohol solution.

Stability is the second reason. Terpene hydrocarbons oxidise easily; removing most of the limonene helps the oil keep better in storage. Strength is the third: because the odour bearing part has been concentrated, a small amount of folded or terpeneless oil matches several times its weight of the parent oil.

But there is a cost. A terpeneless oil loses the light, fresh lift the terpenes gave. Its smell sits closer to the heart of the fruit than to the moment of peeling. On a blotter the parent orange oil opens bright and leaves quickly; a 10 fold oil opens more slowly, deeper, leaning toward the aldehydes.

A processed oil still falls under IFRA limits by composition. As limonene falls, the share of citral or linalool rises, so the use limit can be tighter than for the parent oil. A stronger oil needs a new dilution calculation, not the old one for ordinary orange oil.

Cade Rectified: Removing the Unwanted

Cade is the name of the oil; the source plant is Juniperus oxycedrus, the prickly juniper. The oil is made by destructive distillation, without water or steam, so the wood is pyrolysed. As the essential oil in the wood comes over, it is followed by a tar like material that dissolves in it. Commercial cade oil is a mixture of both. Its principal constituent is recorded as delta cadinene.

Pyrolysing wood produces polycyclic aromatic hydrocarbons such as benzo[a]pyrene, the same class found in cigarette smoke. Redistillation removes most of them. IFRA accepts only rectified cade and rectified birch tar, with the combined level of benzo[a]pyrene and 1,2 benzanthracene in the finished product not exceeding 1 ppb. IFRA recommends that crude cade oil not be used as a fragrance ingredient in any product.

Here the word rectified means something quite different from the orange bottle. For orange, rectified or folded is a matter of smell, solubility and stability. For cade, rectified is the condition of use. Even after this step, benzo[a]pyrene may remain in rectified cade oil at up to 20 ppb, so the oil must be used very low for the finished product to meet the limit.

Two bottles, two reasons for the same word. One goes round again to become stronger; the other goes round again to lose what is not allowed. How citrus oil is taken from the peel in the first place is told in orange peel under the press.

Nine tenths of the orange bottle is limonene.

The smell of orange lives in the remaining tenth.

Each extra distillation is a choice of what to keep and what to let go.
